How to not connect epson xp15000 to wifi

I use USB, to the computer. You block/remove Epson software via firewall. 
 

the idea is to prevent the printer from connecting to Epson servers and pushing an update. I don’t know about the exact situation for this model at this time but when they were released and shortly after non-OEM support comes along and you require that to use it. Back then, an update could be done overnight without you knowing and it disable the machine/ make it not work with that aftermarket accessory. 
 

being an older machine, maybe they are not releasing updates for it anymore, maybe they are. 
 

anytime you use aftermarket anything, chips, waste tank, resetters, firmware, etc- you do not want an update to automatically occur without your permission, as it could cause you a huge PITA at the least, or at the most render the machine 100% unusable for you and your aftermarket use. 
 

you don’t have to, but when connected to WiFi there isn’t anything stopping it from just updating when they send it (OTA update). Via USB, and firewall blocked software, you have no concerns.
